This class concentrates on the tale of two pizzas—New York Style Thin Crust and Chicago Style Pan Pizza. We will learn how to develop the two very different crusts in order to make pizzas that rival the pizza joints in NYC and Lou Malnati's down the
street! Your family will beg you to make these!


#09 & #10: Steak House at Your House (Mon., 10/17)
Learn how to choose the right cut of meat for the perfect steak house experience right in your own home. We will learn various grilling techniques, ways to test for doneness, tips for the juiciest steak for your dollar, and how grades of meat differ. We will learn that Ultimate Creamed Spinach, Colossal Twice Baked Potatoes, and Sautéed Mushroom
Medley Spiked with Butter and Cognac are must have sides!


#11 & #12: Soup's On (Tues., 10/18)
There is nothing like the aroma of a big pot of soup simmering away on a cool fall day! Learn the basics of making homemade chicken and beef stock and some short cuts to "doctor" canned broth to mimic the all-day process. Chinese Velvet Chicken Corn
Soup, Manhattan Style Red Clam Chowder, and Best Ever Chili Con Carne will be demonstrated. Sure to warm the soul!


#13 & #14: Art of the Braise (Thurs., 11/3)
Session #14 will be held at the JPCC Kitchen Learn how to fill your home with savory aromas of succulent Beef Short Ribs in A Red Wine Reduction, braising in your oven as you tend to your day's business. We will discover the benefits of this slow, moist heat method of cooking which produces intense flavors you never dreamed possible for so
little effort! Braised French Lentils with Carrots & Celery, perfect as a side dish or as an elegant bed for Pan Roasted Salmon. Hot & Crusty Popovers will be demonstrated, a perfect accompaniment to dip in the delicious braising sauce.


#15 & #16: Gobble, Gobble (Mon., 11/14)
Whether it's your year to host or you are just a guest, this class is a must have to boost confidence for that big day! Get a new angle on Thanksgiving side dishes such as Warm Roasted Autumn Harvest Salad, Sausage/Apple/Cranberry Stuffing, and an updated version o f New Green Bean Casserole with Crispy Shallots. The finale will be how to make fool proof gravy, without the jar! Turkey do's and don'ts will be discussed so that there will be no need for the Butterball Hotline!

#17 & #18: Jewish Cookery (Mon., 9/12)
Learn how to braid a six-strand Challah for Sabbath. The woven, knobby shape of the braid is meant to reflect the forever winding and sometimes bumpy road of life. This dough is very versatile and can be used to bake Brie En Croute as well. Kreplach like
Grandma made (or not!) will also be demonstrated. Potato Latkes will also be made ... served with traditional applesauce and sour cream, of course!


#19 & #20: Curry in a Hurry (Tues., 10/4)
Contrary to popular belief, all curries are not "hot." Learn how to make speedy yet satisfying curry dishes from three different parts of the globe. Thai Green Curry, Indian Curry Masala, and surprisingly kid-friendly Japanese Curry will all be
demonstrated. These curries are all found at the local grocery store and take less than 30 minutes toprepare, no kidding! Add your favorite protein and veggies to each and pair them with brown or white rice and you have a healthy yet "flavor-sational" meal to end the monotony.

 #21 & #22: Asian Noodles (Mon., 11/7)
Noodles—the Asian symbol for long life—will be celebrated here! Learn how to cook with fresh cut egg noodles for authentic Chicken & Vegetable Chow Mein. We will also explore and learn about the popular Korean cellophane noodle dish Chap Chae, a stir-fried clear noodle dish with healthy vegetables and tasty grilled meat. Quick and easy Japanese
Udon Noodle Soup will also be prepared.


#23 & #24: Holiday Tapas Party (Mon., 12/12)
Bring the little plates of Spain to your next holiday party for a refreshingly fun and stylish fete! Savory Chorizo Stuffed Dates Wrapped in Bacon with Red Pepper Remoulade, classic Warm Spanish Goat Cheese & Tomato Sauce with Crostini, and popular
Potato Salad with Garlic Aioli will be demonstrated.

Hummers & Strummers

This all ukulele & singing band presents toetapping programs of Hawaiian oldies, goldies, show tunes, and a variety of songs to delight the most discerning audience. For fifteen years, they have entertained up and down the North Shore—women's clubs, business and community groups, retirement communities, nursing homes and private parties.
Their new season gets underway on October 6th at 12:45 pm. All those new to the group are expected to be PTC members and participate in the 8-week orientation sessions. There is a $25 materials fee for books and a loaner instrument.

Spanish for Gringos ~ Continuing

Are you traveling to a Spanish-speaking country? Do you want to better communicate with Spanishspeaking people you encounter here at home? Are your children or grandchildren learning to be bilingual and you want to join the party? Do you just want the mental challenge of learning a new skill? Vocabulary will be pre-taught and then used. Storytelling will be used to develop students' fluency. Stories provide a context for vocabulary
and grammar which allow the brain to store the information more efficiently. You learn the language the natural way by listening to interesting things.

Fall Bridge Classes

The first in a series of four beginning bridge sessions beginning this fall, is based on Audrey Grant's "Bidding in the 21st Century—Club Series." This class will be followed seasonally by sessions devoted  to the "Play of the Hand," "Defense," and "Commonly
Used Conventions." By the time you complete the sequence, you will have developed a solid bridge basic skill set. Our Supervised Play classes help to develop confidence in your newly acquired skills as you play bridge under the guidance of our "Answer

Great Decisions

This is the name of a briefing book and a Foreign Policy Association program which engages adults in learning about our world. It encourages debate and discussion of important global issues. In 2011, the focus will be on eight issues of concern to U.S. policymakers today: Rebuilding Haiti, U.S. National Security, Horn of Africa, Responding to the Financial Crisis, Germany Ascendant, Sanctions and Nonproliferation, The Caucus, and Global Goverance.
